Ingredients

  • 1 c. yellow cornmeal
  • 1/2 tsp. ground thyme
  • 1/2 tsp. sugar
  • 1/4 tsp. cayenne pepper
  • 1 tsp. salt
  • 3 Tbsp. minced green onion
  • 1 c. boiling water
  • 1 egg, beaten
  • 1 Tbsp. margarine, melted
  • dash of Tabasco

Method

  • Preheat oven to 500°.
  • Spray small cup muffin tin with nonstick vegetable coating.
  • Mix dry ingredients, including onion, with a fork.
  • Make a well in center and pour in the boiling water. Stir briskly.
  • Stir in beaten egg, margarine and Tabasco.
  • Spoon 2 tablespoons batter into each muffin cup.
  • Bake 15 or 20 minutes or until golden brown on top.
  • Makes a dozen small muffins.
