Ingredients
- 1 c. yellow cornmeal
- 1/2 tsp. ground thyme
- 1/2 tsp. sugar
- 1/4 tsp. cayenne pepper
- 1 tsp. salt
- 3 Tbsp. minced green onion
- 1 c. boiling water
- 1 egg, beaten
- 1 Tbsp. margarine, melted
- dash of Tabasco
Method
- Preheat oven to 500°.
- Spray small cup muffin tin with nonstick vegetable coating.
- Mix dry ingredients, including onion, with a fork.
- Make a well in center and pour in the boiling water. Stir briskly.
- Stir in beaten egg, margarine and Tabasco.
- Spoon 2 tablespoons batter into each muffin cup.
- Bake 15 or 20 minutes or until golden brown on top.
- Makes a dozen small muffins.
