Ingredients

  • 3 shallots
  • 2 tsp. chopped garlic
  • 1 red or green chiles
  • 2 tbsp. fish sauce
  • 1 tbsp. soy sauce
  • 1 tbsp. lime juice
  • 2 tsp. brown sugar
  • 1/2 c. basil leaves
  • 2 tbsp. peanut oil
  • 1 lb. large shrimp
  • Prepared jasmine rice

Method

  • In a small bowl, combine shallots, garlic, and chile(s).
  • In another bowl, combine fish sauce, soy sauce, lime juice, brown sugar, and basil leaves.
  • Heat peanut oil in a large wok or skillet over medium-high heat; add shallot mixture and cook until garlic is lightly golden, 1 minute.
  • Add peeled shrimp with tails; stir-fry 1 minute.
  • Add soy sauce mixture and stir-fry until shrimp are just cooked through, 2 to 3 minutes.
  • Can serve over jasmine rice.
