- 3 shallots
- 2 tsp. chopped garlic
- 1 red or green chiles
- 2 tbsp. fish sauce
- 1 tbsp. soy sauce
- 1 tbsp. lime juice
- 2 tsp. brown sugar
- 1/2 c. basil leaves
- 2 tbsp. peanut oil
- 1 lb. large shrimp
- Prepared jasmine rice
Method
- In a small bowl, combine shallots, garlic, and chile(s).
- In another bowl, combine fish sauce, soy sauce, lime juice, brown sugar, and basil leaves.
- Heat peanut oil in a large wok or skillet over medium-high heat; add shallot mixture and cook until garlic is lightly golden, 1 minute.
- Add peeled shrimp with tails; stir-fry 1 minute.
- Add soy sauce mixture and stir-fry until shrimp are just cooked through, 2 to 3 minutes.
- Can serve over jasmine rice.
