Ingredients
- 3 Tbsp. butter or margarine
- 1 medium yellow onion, peeled and chopped
- 1 1/2 c. uncooked rice
- 1 medium green pepper, chopped
- 1 tsp. chili powder
- 1/2 c. tomato sauce
- 1 tsp. dried oregano
- 1 c. tomato juice
- 1 1/2 c. water
- 1 1/2 tsp. salt
Method
- Melt the butter in a heavy 3-quart saucepan over moderate heat.
- Add the onion, and cook, uncovered, for 5 minutes, or until soft.
- Stir in the rice, green pepper, chili powder, oregano, tomato juice and tomato sauce; then add the water and salt.
- Stir once; cover and bring to a boil.
- Reduce the heat and simmer for 20 minutes, or until the rice is tender and the liquid has been absorbed.
- Makes 6 servings.
