Ingredients

  • 3 Tbsp. butter or margarine
  • 1 medium yellow onion, peeled and chopped
  • 1 1/2 c. uncooked rice
  • 1 medium green pepper, chopped
  • 1 tsp. chili powder
  • 1/2 c. tomato sauce
  • 1 tsp. dried oregano
  • 1 c. tomato juice
  • 1 1/2 c. water
  • 1 1/2 tsp. salt

Method

  • Melt the butter in a heavy 3-quart saucepan over moderate heat.
  • Add the onion, and cook, uncovered, for 5 minutes, or until soft.
  • Stir in the rice, green pepper, chili powder, oregano, tomato juice and tomato sauce; then add the water and salt.
  • Stir once; cover and bring to a boil.
  • Reduce the heat and simmer for 20 minutes, or until the rice is tender and the liquid has been absorbed.
  • Makes 6 servings.
