Ingredients

  • 1 large spaghetti squash
  • 1 lb. lean ground turkey
  • 2 cloves garlic, chopped
  • 1 large onion, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 red bell pepper, sliced
  • 1 c. mushrooms, sliced
  • 16 or 20 oz. tomato sauce with Italian seasoning

Method

  • Cut spaghetti squash in half.
  • Place face down in glass Pyrex in 2 inches of water.
  • Bake 45 minutes at 375°.
  • In separate pan, brown and season to taste ground turkey; add garlic, onion, all the peppers and mushrooms.
  • Let all ingredients cook together 10 to 15 minutes.
  • Add tomato sauce.
  • Season to taste.
  • When spaghetti squash is done, turn squash right side up and fork out spaghetti looking squash.
  • Serve the ingredients over squash.
  • Very tasty!
