Ingredients
- 1 large spaghetti squash
- 1 lb. lean ground turkey
- 2 cloves garlic, chopped
- 1 large onion, sliced
- 1/2 green bell pepper, sliced
- 1/2 red bell pepper, sliced
- 1 c. mushrooms, sliced
- 16 or 20 oz. tomato sauce with Italian seasoning
Method
- Cut spaghetti squash in half.
- Place face down in glass Pyrex in 2 inches of water.
- Bake 45 minutes at 375°.
- In separate pan, brown and season to taste ground turkey; add garlic, onion, all the peppers and mushrooms.
- Let all ingredients cook together 10 to 15 minutes.
- Add tomato sauce.
- Season to taste.
- When spaghetti squash is done, turn squash right side up and fork out spaghetti looking squash.
- Serve the ingredients over squash.
- Very tasty!
