Ingredients

  • 1 pkg. rotini
  • 1 lb. smoked sausage, cut into 1/2-inch slices
  • 3 hard-cooked eggs, chopped
  • 1 medium tomato
  • 1 (16 oz.) can kidney beans, drained
  • 1/2 medium green pepper, chopped
  • 1/2 medium red onion, chopped
  • 1 c. sliced olives
  • 1 1/2 c. (6 oz.) cubed Mozzarella cheese
  • 2 Tbsp. parsley
  • 1/2 c. vegetable oil
  • 1/4 c. wine vinegar
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. oregano leaves

Method

  • Prepare rotini according to package directions. Drain. Combine all ingredients. Toss well to mix. Cover and chill thoroughly.
  • Toss gently before serving.
  • Refrigerate leftovers. Makes 6 to 8 servings.
