Ingredients

  • 1 lb. ground chuck
  • 1/2 c. chopped onion
  • 3 c. water
  • 2 (16 oz.) cans stewed tomatoes, cut up
  • 2 (16 oz.) cans kidney beans
  • 1 (15 oz.) can tomato sauce
  • 1 envelope taco seasoning mix
  • shredded Cheddar cheese
  • corn chips
  • sour cream

Method

  • In a large pan, cook ground chuck and onions; drain.
  • Add water, undrained tomatoes, undrained kidney beans, tomato sauce and taco seasoning mix.
  • Simmer, covered, 15 to 20 minutes. Top each bowl of soup with cheese, corn chips and sour cream.
  • Serves 6 to 8.
