Ingredients

  • 1 pound grnd beef
  • 1/2 c. minced onion
  • 1 (15 ounce.) can tomato sauce
  • 1/2 c. water
  • 1 pkg. taco seasoning mix
  • 1 (12 ounce.) pkg. med. noodles
  • 2 c. sm. curd cottage cheese
  • 1/4 c. lowfat sour cream
  • 1 teaspoon flour
  • 2 teaspoon beef bouillon (granular)
  • 1/4 c. minced green onion
  • 1 c. shredded Mozzarella cheese

Method

  • Cook grnd beef and onion till meat is browned, stirring often to crumble meat; drain off drippings.
  • Add in tomato sauce, water and taco seasoning mix; bring to a boil.
  • Reduce heat and simmer 10 min.
  • Cook noodles according to package and drain.
  • Combine noodles, cottage cheese, lowfat sour cream, flour, bouillon and green onion.
  • Mix well.
  • Spoon noodle mix into a greased 2 1/2 qt casserole.
  • Top with meat mix.
  • Bake at 350 degrees for 25 min.
  • Sprinkle with Mozzarella cheese and bake 5 min longer or possibly till cheese is melted.
  • Let stand 10 min, then serve.
