Ingredients
- 2 large Vidalia onions
- 2 Tbsp. butter
- 1/2 lb. ground beef
- 1/2 c. sour cream
- 1/2 c. shredded Cheddar cheese
- 1/2 c. sliced mushrooms
Method
- Peel onions.
- Remove centers, leaving a shell.
- Chop 2 tablespoons onion from centers.
- Set aside.
- Place butter in onions.
- Cook on High for 6 to 8 minutes.
- Brown onion with ground beef in microwave on High for 5 minutes.
- Drain.
- Add sour cream, cheese and mushrooms.
- Fill onion shells.
- Cook on Medium-high in microwave for 2 to 3 minutes, until heated throughout.
- Makes 4 servings.
