Ingredients

  • 2 large Vidalia onions
  • 2 Tbsp. butter
  • 1/2 lb. ground beef
  • 1/2 c. sour cream
  • 1/2 c. shredded Cheddar cheese
  • 1/2 c. sliced mushrooms

Method

  • Peel onions.
  • Remove centers, leaving a shell.
  • Chop 2 tablespoons onion from centers.
  • Set aside.
  • Place butter in onions.
  • Cook on High for 6 to 8 minutes.
  • Brown onion with ground beef in microwave on High for 5 minutes.
  • Drain.
  • Add sour cream, cheese and mushrooms.
  • Fill onion shells.
  • Cook on Medium-high in microwave for 2 to 3 minutes, until heated throughout.
  • Makes 4 servings.
