Ingredients

  • 12 cup sugar
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch
  • 1 -2 serrano pepper (chopped)
  • cayenne pepper (lots for me)
  • 12 cucumber (chopped without seeds)
  • 2 tablespoons of minced cilantro
  • water
  • 12 cup rice vinegar
  • 1 tablespoon lime zest

Method

  • In a small saucepan on Medium heat.
  • Melt sugar in the vinegar.
  • add oyster sauce.
  • add pepper and cucumber.
  • Saute for 5 minutes.
  • Mix Cornstarch in a cup with water.
  • Add to thicken recipe.
  • add Cayenne pepper and lime zest.
  • Divide into 4 portions.
  • Use as a dipping sauce.
