Ingredients

  • 1/4 c. all-purpose flour
  • 2 lb. beef round steak (1-inch thick)
  • 3 Tbsp. shortening
  • 1/2 c. chopped onion
  • 1 (16 oz.) can tomato wedges, cut up
  • 2 Tbsp. chopped green pepper
  • 1 tsp. salt

Method

  • Combine flour, 1 teaspoon salt and 1/4 teaspoon pepper.
  • Pound into meat.
  • In large skillet, brown meat on both sides in shortening.
  • Top with onion and tomatoes; cover and cook over low heat 1 1/2 hours or until tender.
  • Add green pepper; cook 15 minutes more.
  • Skim off excess fat.
  • Thicken juice, if desired. Makes 6 to 8 servings.
