Ingredients
- 1/4 c. all-purpose flour
- 2 lb. beef round steak (1-inch thick)
- 3 Tbsp. shortening
- 1/2 c. chopped onion
- 1 (16 oz.) can tomato wedges, cut up
- 2 Tbsp. chopped green pepper
- 1 tsp. salt
Method
- Combine flour, 1 teaspoon salt and 1/4 teaspoon pepper.
- Pound into meat.
- In large skillet, brown meat on both sides in shortening.
- Top with onion and tomatoes; cover and cook over low heat 1 1/2 hours or until tender.
- Add green pepper; cook 15 minutes more.
- Skim off excess fat.
- Thicken juice, if desired. Makes 6 to 8 servings.
