Ingredients
- 1 c. chicken broth
- 3 c. chopped potatoes
- 1/2 c. celery
- 1/2 c. onion
- bacon or ham
- 1 tsp. parsley
- 1 tsp. salt
- 2 1/2 c. milk
- 2 Tbsp. flour
- 1 (6 oz.) pkg. Swiss cheese (I use more for thicker soup)
Method
- Put chopped veggies in broth and cook for 10 minutes or until tender.
- Dissolve flour in milk; add to hot veggies.
- Slowly boil. Shred cheese and slowly add to soup until melted.
- This is thick and rich.
- Great served with French bread.
