Ingredients
- 1 large can sweet potatoes
- 1 large can crushed pineapple
- 1 c. sugar
- 1/2 c. coconut
- 1/2 tsp. nutmeg
- 2 Tbsp. margarine
- 3 Tbsp. cornstarch
Method
- Make sauce from juice from pineapple and potatoes.
- Add sugar, coconut, nutmeg, margarine and cornstarch.
- Cook until thickens. Place potatoes in baking dish.
- Pour sauce over potatoes.
- Bake at 350° for 40 to 45 minutes.
