Ingredients

  • 2 egg yokes
  • 1 T chopped fresh chives
  • 1 T chopped fresh parsley
  • 2 cloves garlic crushed
  • 1 T plus 1 1/2 tsp lemon juice
  • 1/4 tsp dry mustard
  • 1/8 tsp ground red pepper
  • Dash of salt
  • 1/2 cup butter or oleo, softened

Method

  • Combine first 8 ingredients in top of double boiler.
  • Place over hot (not boiling) water. Stir with a wire whisk until well blended.
  • Add butter, 1 T at a time, stirring constantly with wire whisk until butter melts.
  • Continue whisking until sauce is thickened.
  • Serve over seafood, beef or vegetables.
