Ingredients
- 2 egg yokes
- 1 T chopped fresh chives
- 1 T chopped fresh parsley
- 2 cloves garlic crushed
- 1 T plus 1 1/2 tsp lemon juice
- 1/4 tsp dry mustard
- 1/8 tsp ground red pepper
- Dash of salt
- 1/2 cup butter or oleo, softened
Method
- Combine first 8 ingredients in top of double boiler.
- Place over hot (not boiling) water. Stir with a wire whisk until well blended.
- Add butter, 1 T at a time, stirring constantly with wire whisk until butter melts.
- Continue whisking until sauce is thickened.
- Serve over seafood, beef or vegetables.
