Ingredients
- 6 medium sweet potatoes
- 2 cups sugar
- 1 teaspoon freshly grated nutmeg
- 6 inch strip of lemon rind, yellow part only
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter
- 4 tablespoons lemon juice
Method
- Rinse the potatoes under warm water.
- Place in a large pot, cover with cold water and bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 30 minutes.
- Drain and let cool.
- In a saucepan over medium heat, combine the sugar, 1/2 cup water, nutmeg, lemon rind and salt.
- Simmer for 10 minutes.
- Add 5 tablespoons of the butter and stir well.
- When the butter has melted, remove from heat, beat in the lemon juice and set aside.
- Preheat the oven to 425 degrees.
- Peel the sweet potatoes and slice into 1/2-inch discs.
- Use the remaining butter to grease a shallow baking dish.
- Lay the sweet potatoes in a single layer, pour the lemon syrup on top and bake for 30 minutes until bubbling hot.
