Ingredients

  • 1 c. vegetable oil
  • 2 c. sugar
  • 4 eggs, separated
  • 1/4 c. hot water
  • 2 1/2 c. sifted cake flour
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1 1/2 c. grated, uncooked sweet potatoes
  • 1 c. chopped pecans or walnuts
  • 1 tsp. vanilla extract

Method

  • Combine dry ingredients and add to oil mixture; mix just until moistened.
  • Combine oil, sugar, egg yolks and water.
  • Beat with electric mixer at medium speed, just until combined.
  • Stir in sweet potatoes, pecans and vanilla. Beat egg whites until stiff, but not dry.
  • Fold into cake pans and bake at 350°.
