Ingredients

  • 1/4 c vegetable oil
  • 2 lbs sweet potatoes peeled and sliced
  • 2 Tbsp brown sugar
  • 1 tsp ground cinnamon
  • 3/4 tsp salt
  • 1 pinch freshly ground pepper

Method

  • Preheat oven to 375 degrees. Pour oil into a 9 x 13 inch baking dish and place in the oven until hot, about 5 minutes.
  • Add potatoes to oiled dish and bake for 20 minutes, turning after 10 minutes.
  • In a small bowl, mix together brown sugar, cinnamon, salt, and pepper.
  • After 20 minutes, remove from the oven and coat with the brown sugar mixture.
  • Return to the oven and roast for another 10 minutes, or until potatoes are tender and golden brown. Stir potatoes as necessary to allow them to brown evenly. Remove the potatoes and place on paper towels to drain, then transfer to a serving dish.
