Ingredients
- 4 to 6 large sweet potatoes
- 2 c. sugar
- 2 sticks butter or margarine
- 6 eggs
- 1 can Eagle Brand milk
- lemon extract (about 1 tsp.)
- 3 uncooked pie crusts
Method
- Cook potatoes until done.
- Drain and mash through a dicer.
- In a large bowl, add to potatoes the melted butter, sugar and condensed milk.
- Mix well.
- Add slightly beaten eggs; mix well. Pour into ready prepared pie crust, uncooked.
- Bake in moderate oven at 350° or until done.
- Yields 3 pies.
