Ingredients

  • 1/2 c. softened butter
  • 1 1/4 c. sugar
  • 2 eggs
  • 1 1/4 c. mashed sweet potatoes, canned or cooked
  • 1 1/2 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 c. milk
  • 1/4 c. chopped pecans or walnuts
  • 1/2 c. raisins

Method

  • In a mixing bowl, cream butter and sugar.
  • Add eggs and mix well.
  • Blend
  • in
  • sweet
  • potatoes.
  • Sift flour with baking powder, salt, cinnamon and nutmeg.
  • Add alternately with milk. Do not overmix.
  • Fold in nuts and raisins.
  • Grease muffin tins and fill 2/3
  • full.
  • Bake
  • 25 minutes in preheated 400° oven. Yield: 3 dozen muffins.
