- 1/2 c. softened butter
- 1 1/4 c. sugar
- 2 eggs
- 1 1/4 c. mashed sweet potatoes, canned or cooked
- 1 1/2 c. flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 c. milk
- 1/4 c. chopped pecans or walnuts
- 1/2 c. raisins
Method
- In a mixing bowl, cream butter and sugar.
- Add eggs and mix well.
- Blend
- in
- sweet
- potatoes.
- Sift flour with baking powder, salt, cinnamon and nutmeg.
- Add alternately with milk. Do not overmix.
- Fold in nuts and raisins.
- Grease muffin tins and fill 2/3
- full.
- Bake
- 25 minutes in preheated 400° oven. Yield: 3 dozen muffins.
