Ingredients
- 1 1/2 c. sugar
- 1/3 c. water
- 2 egg whites
- 1 Tbsp. corn syrup or 1/4 tsp. cream of tartar
- 1 tsp. vanilla
- 1 c. coconut
Method
- Combine all ingredients, except vanilla and coconut, in top of double boiler.
- Beat 1 minute.
- Place over boiling water and beat until frosting stands in stiff peaks (about 7 minutes).
- Remove from water; add vanilla and beat for 2 minutes.
- Frost cake and sprinkle top and sides with coconut.
