Ingredients

  • 1 2/3 lbs sweet potatoes, peeled, cut into wedges
  • 1/4 cup olive oil
  • 1/4 cup sweet chili sauce
  • 1/2 cup sour cream
  • 2 None green onions, sliced

Method

  • Cook sweet potatoes in a saucepan of boiling salted water for 4-5 mins, until just tender. Drain well.
  • Heat a grill pan or large skillet on high heat. Combine oil, sauce and sweet potatoes in a large bowl. Toss to coat well and season to taste.
  • Arrange wedges in a single layer on grill pan. Cook 10-15 mins, turning and brushing with sauce, until cooked through and golden brown.
  • Serve wedges hot with sour cream sprinkled with green onions.
