Ingredients
- 1 2/3 lbs sweet potatoes, peeled, cut into wedges
- 1/4 cup olive oil
- 1/4 cup sweet chili sauce
- 1/2 cup sour cream
- 2 None green onions, sliced
Method
- Cook sweet potatoes in a saucepan of boiling salted water for 4-5 mins, until just tender. Drain well.
- Heat a grill pan or large skillet on high heat. Combine oil, sauce and sweet potatoes in a large bowl. Toss to coat well and season to taste.
- Arrange wedges in a single layer on grill pan. Cook 10-15 mins, turning and brushing with sauce, until cooked through and golden brown.
- Serve wedges hot with sour cream sprinkled with green onions.
