Ingredients

  • 2 sticks sweet butter
  • 2 c. sugar
  • 4 eggs (room temperature)
  • 1 tsp. vanilla
  • 2 Tbsp. lemon juice
  • 3 c. flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 c. buttermilk
  • confectioners sugar

Method

  • Preheat oven to 350°.
  • Butter and flour a 10-inch tube or Bundt pan.
  • Cream butter and sugar together until fluffy.
  • Add eggs, one at a time.
  • Add vanilla and lemon juice; blend well.
  • Sift together flour, soda, baking powder and salt.
  • Add dry ingredients to creamed mixture alternately with buttermilk.
  • Beat well after each addition.
  • Batter should be smooth.
  • Pour into prepared baking pan. If using Bundt or tube pan, bake for one hour.
  • Cool on rack; unmold.
  • Dust with confectioners sugar.
  • Serves 8.
