Ingredients

  • 1 lb beef roast or pork roast
  • 3 clove garlic, crushed
  • 1 onion, chopped
  • 1 large carrot, peeled and chopped
  • 2 large tomatos, seeded
  • 2 chopped peppers, jalepeno serrano.. your choice
  • 3 tbsp chili powder
  • 3 tsp salt
  • 1 tbsp cumin
  • 1 1/2 tsp dried oregano
  • 1 1/2 tsp coarse ground pepper
  • 1 beef stock

Method

  • add all ingredients to a large stock pot, use enough stock to cover the meat
  • bring to boil, then simmer 2 hours until beef falls apart
  • remove the beef and shred with a fork
  • drizzle shredded beef with stock juices until desired moistness achieved, salt and pepper to taste
  • * remaining stock juices can be frozen for future use as soup base
