Ingredients

  • 1 tlbs. minced fresh rosemary
  • 4 cloves garlic (divided use, 3 cloves chopped, 1 minced)
  • 6 to 8 oz. goat cheese
  • 1/2 cup butter
  • 1 small onion, chopped
  • 1 10 oz. package frozen spinach, thawed, rinsed and drained
  • 4 to 5 oz. marinated mushrooms, drained and chopped to less than three quarter inch pieces
  • 2 to 3 pieces cooked and crumbled bacon
  • 1/2 cup shredded cheddar cheese
  • salt and pepper to taste

Method

  • Process minced garlic, rosemary and goat cheese in food processor until thoroughly combined. Set aside. Melt butter in medium saucepan over medium heat. Add remaining garlic and onion to butter and saute about 8 minutes or until just slightly browned. Stir in spinach, mushrooms, bacon, goat cheese mixture and cheddar cheese and mix until well blended. Serve warm with hearty crackers.
