Ingredients
- 1 pkg. yeast
- 1/4 c. water
- 2/3 c. shortening
- 1 c. hot potato water
- 2/3 c. sugar
- 2 tsp. salt
- 1 c. hot mashed potatoes
- 3 well-beaten eggs
- 2 c. flour
- 6 to 7 c. flour
Method
- Dissolve yeast in 1/4 cup water.
- Stir in next 5 ingredients until dissolved, then cool to lukewarm.
- Add eggs and 2 cups flour.
- When smooth, add 6 to 7 cups flour.
- Knead until smooth. Let raise until double.
- Shape in rolls and raise again.
- Bake at 400° for 12 to 15 minutes.
