Ingredients
- 2/3 c. sugar
- 1/4 tsp. salt
- 4 Tbsp. cornstarch
- 1/3 c. reconstituted lemon juice
- 2 1/2 c. water
- 2 eggs
- 4 drops yellow food coloring
- 1 Tbsp. oleo
Method
- In bowl safe for microwave, put in sugar, salt and cornstarch mix.
- Add lemon juice and eggs.
- Beat well.
- Add 1/2 cup water. Beat again.
- Add the other 2 cups water and food coloring.
- Beat again, then put in microwave for 2 minutes.
- Take out and beat.
- Do this for around 8 minutes.
- Beat after every 2 minutes.
- It is important to beat it good and be sure to stir it good off the bottom.
- Beat in oleo.
- Pour into 9-inch baked pie shell.
