Ingredients

  • 1 (3 oz.) pkg. lemon flavored gelatin
  • 1 c. boiling water
  • 1/2 c. cold water
  • 1/8 tsp. salt
  • 1 can crushed pineapple (with syrup)
  • 1/2 c. carrots, shredded

Method

  • Empty gelatin into small bowl; add boiling water and stir until dissolved.
  • Add cold water, salt and pineapple.
  • Chill until mixture is slightly thickened.
  • Fold into gelatin mixture the shredded carrots.
  • Pour into 4 cup molds or 1 (8 x 8 x 2-inch) baking pan.
  • Chill until set.
  • Serve in the pan or molds.
  • Can also be cut into squares.
  • Makes 6 servings.
