Ingredients
- 1 (3 oz.) pkg. lemon flavored gelatin
- 1 c. boiling water
- 1/2 c. cold water
- 1/8 tsp. salt
- 1 can crushed pineapple (with syrup)
- 1/2 c. carrots, shredded
Method
- Empty gelatin into small bowl; add boiling water and stir until dissolved.
- Add cold water, salt and pineapple.
- Chill until mixture is slightly thickened.
- Fold into gelatin mixture the shredded carrots.
- Pour into 4 cup molds or 1 (8 x 8 x 2-inch) baking pan.
- Chill until set.
- Serve in the pan or molds.
- Can also be cut into squares.
- Makes 6 servings.
