Ingredients

  • 2 cups Cucumbers, 1/2 " Slices
  • 1/2 cups Slivered Red Onions
  • 1/2 cups Rice Wine Vinegar
  • 2 Tablespoons Sugar
  • 2 cups Watermelon, Chunked
  • 1/2 teaspoons Red Pepper Flakes
  • 2 Tablespoons Chopped Fresh Mint

Method

  • Combine cucumbers, onions, vinegar and sugar in a bowl. These can sit for a while in the refrigerator before you need them. Before serving, add watermelon, red pepper flakes, and mint to the mixture. Toss gently.
  • Please note that the watermelon will take on the flavors quickly. You don't want to add the pepper flakes or onion too soon.
