Ingredients

  • 3 TB olive oil
  • 3-4 cloves of chopped garlic
  • 6 large ripe tomatoes (very coursely chopped)
  • 1 tsp sea salt (or more to taste)
  • Freshly ground black pepper
  • 1/4 cup chopped herbs (basil, oregano, parsley, marjoram)
  • 1/4 tsp red pepper flakes
  • 1/4 cup grated cheese (Parmesan or a mix of Italian cheeses)
  • 8 oz. dry pasta
  • Additional olive oil
  • Additional cheese

Method

  • Combine the oil, garlic, salt, black pepper and red pepper. Add chopped tomatoes, herbs and cheese. Allow to stand at room temperature for at least 3 hours.
  • Taste and add additional salt, pepper and cheese if desired.
  • Boil pasta until al dente. Drain and toss hot pasta with tomato mixture.
  • Pass additional cheese at the table.
