Ingredients
- 10 oz frozen blackberries
- 1/4 cup powdered sugar, plus additional, for dusting
- 1 loaf brioche, cut into 12 slices
- 8 oz strawberries, thickly sliced
- 1 cup raspberries
- 1 cup blueberries
Method
- For the blackberry coulis, place blackberries, powdered sugar and 1/4 cup water in medium saucepan on high heat; bring to a boil. Reduce heat to low; simmer, uncovered, for 3 mins. Strain into a bowl; cool for 10 mins.
- Using a 3-inch pastry cutter, cut a round from each brioche slice. Mix strawberries, raspberries and blueberries in a bowl.
- Place a brioche round on each of 4 serving plates. Top with 1/3 of the berries. Repeat layers twice.
- Pour blackberry coulis over each stack; dust with sifted powdered sugar.
