Ingredients

  • 1 cup dry lima beans
  • 1 cup corn - dried, fresh or frozen
  • 2 Tbsp. fresh chives, chopped
  • 1/8 tsp. cumin
  • 1 Tbsp. heavy cream
  • 1 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1/8 tsp. crushed red pepper
  • 2 Tbsp. raw sunflower seeds, hulled

Method

  • Rinse & sort beans. Place beans in a medium saucepan & cover with water. Bring to a boil, cover & simmer until tender (approximately 1 hour). Remove from heat. Add corn, one cup water & all remaining ingredients except sunflower seeds. Return to heat, bring to a boil, reduce heat & cook for 10 minutes over medium heat until the liquid is all but absorbed. Garnish with sunflower seeds.
