Ingredients
- 2 garlic cloves
- 1 medium onion
- 2 ounces cilantro, plus extra to serve
- 2 ounces parsley
- 2 tablespoons olive oil
- 14 ounces basmati rice
- 2 12 cups chicken broth
- salt and pepper
Method
- Whizz the garlic, onion and herbs in a food processor with a splah of water until you have a thick green paste.
- Heat the oil in a saucepan; when hot add the paste and fry for 5 mins, stirring.
- Add the rice then stir again before adding the broth and seasoning with salt and pepper.
- Top up with water to come to a fingertip's depth over the rice.
- Simmer for 10 mins uncovered until all the liquid has gone then cover and let stand for 10 mins or so.
- Fluff up with a fork then stir through the remaining cilantro to serve.
