Ingredients

  • 2 garlic cloves
  • 1 medium onion
  • 2 ounces cilantro, plus extra to serve
  • 2 ounces parsley
  • 2 tablespoons olive oil
  • 14 ounces basmati rice
  • 2 12 cups chicken broth
  • salt and pepper

Method

  • Whizz the garlic, onion and herbs in a food processor with a splah of water until you have a thick green paste.
  • Heat the oil in a saucepan; when hot add the paste and fry for 5 mins, stirring.
  • Add the rice then stir again before adding the broth and seasoning with salt and pepper.
  • Top up with water to come to a fingertip's depth over the rice.
  • Simmer for 10 mins uncovered until all the liquid has gone then cover and let stand for 10 mins or so.
  • Fluff up with a fork then stir through the remaining cilantro to serve.
