Ingredients
- 24 vanilla wafers
- 3/4 c. sugar
- 16 oz. softened cream cheese
- 2 tsp. lemon juice
- 2 eggs
- 1 tsp. vanilla
- 1 can cherry pie filling
Method
- Line a 24-muffin tin with cupcake liners.
- Place one vanilla wafer in each one.
- Blend sugar, cream cheese, lemon juice, eggs and vanilla in bowl.
- Spoon in each tin to about half full.
- Bake at 350° for 20 minutes.
- Let cool.
- Top each with a spoonful of cherry pie filling.
