Ingredients

  • 2 1/2 cups All Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1/2 cup Butter, softened
  • 1/2 cup Peanut Butter
  • 1/2 cup Mashed Banana
  • 1/2 cup White Sugar
  • 1/2 cup packed Brown Sugar
  • 1/2 tsp Almond Extract OR 1 tsp Vanilla Extract
  • 2 Eggs, room temp
  • 2 cups Chocolate Chips
  • 1 cup Chopped Walnuts

Method

  • Preheat oven to 350.
  • In a large mixing bowl, cream butter and mashed banana on high until thoroughly mixed. Gradually add peanut butter, eggs (one at a time), almond extract and both kinds of sugar. Continue to beat on high until smooth.
  • In a medium mixing bowl, combine flour, baking soda and salt. Add to wet ingredients slowly, 1/2 cup at a time, mixing all the while.
  • Stir in chocolate chips and walnuts.
  • Drop by heaped tablespoon fulls onto ungreased cookie sheets and bake 12-15 minutes until golden brown.
  • Leave on cookie sheets about 2 minutes after removing from oven, then allow to cool completely on cooling rack.
