- 2 1/2 cups All Purpose Flour
- 1 tsp Baking Soda
- 1 tsp Salt
- 1/2 cup Butter, softened
- 1/2 cup Peanut Butter
- 1/2 cup Mashed Banana
- 1/2 cup White Sugar
- 1/2 cup packed Brown Sugar
- 1/2 tsp Almond Extract OR 1 tsp Vanilla Extract
- 2 Eggs, room temp
- 2 cups Chocolate Chips
- 1 cup Chopped Walnuts
Method
- Preheat oven to 350.
- In a large mixing bowl, cream butter and mashed banana on high until thoroughly mixed. Gradually add peanut butter, eggs (one at a time), almond extract and both kinds of sugar. Continue to beat on high until smooth.
- In a medium mixing bowl, combine flour, baking soda and salt. Add to wet ingredients slowly, 1/2 cup at a time, mixing all the while.
- Stir in chocolate chips and walnuts.
- Drop by heaped tablespoon fulls onto ungreased cookie sheets and bake 12-15 minutes until golden brown.
- Leave on cookie sheets about 2 minutes after removing from oven, then allow to cool completely on cooling rack.
