Ingredients
- 1 medium zucchini squash
- 1/2 lb. ground chuck
- 3/4 c. instant rice
- 1 small onion, chopped
- 1/2 c. spaghetti sauce
- Parmesan cheese
- a few slices of Cheddar or Mozzarella cheese, if desired
Method
- Wash squash and cut in half lengthwise.
- Remove and discard seeds.
- Using a spoon, remove and save small chunks of squash until only the thick shell remains.
- Brown ground chuck lightly and drain.
- Add rice, onion, squash chunks and spaghetti sauce. Place squash in a pan, cut sides up.
- Fill firmly with meat and rice mixture.
- Sprinkle with Parmesan cheese.
- Cover with foil and bake at 350° for 1 hour.
