Ingredients

  • 1 medium zucchini squash
  • 1/2 lb. ground chuck
  • 3/4 c. instant rice
  • 1 small onion, chopped
  • 1/2 c. spaghetti sauce
  • Parmesan cheese
  • a few slices of Cheddar or Mozzarella cheese, if desired

Method

  • Wash squash and cut in half lengthwise.
  • Remove and discard seeds.
  • Using a spoon, remove and save small chunks of squash until only the thick shell remains.
  • Brown ground chuck lightly and drain.
  • Add rice, onion, squash chunks and spaghetti sauce. Place squash in a pan, cut sides up.
  • Fill firmly with meat and rice mixture.
  • Sprinkle with Parmesan cheese.
  • Cover with foil and bake at 350° for 1 hour.
