Ingredients

  • 4 zucchinis or summer squash
  • 1 cup cheese such as cheddar, mozzarella, or provolone, shredded
  • 1/2 cup tomato sauce
  • 1 tablespoon heavy cream

Method

  • Cut a thin slice off the bottom part of each zucchini or squash so that they rest flat in a baking dish.
  • Remove the top part of each zucchini and scoop out some of the pulp.
  • Fill up each zucchini with the mixture of three cheeses.
  • Mix the tomato sauce and cream in a bowl and add to the bottom of the baking dish. Add water if more sauce is needed.
  • Place each zucchini in the dish. Add the zucchinis and bake for 20 minutes.
