Ingredients
- 4 zucchinis or summer squash
- 1 cup cheese such as cheddar, mozzarella, or provolone, shredded
- 1/2 cup tomato sauce
- 1 tablespoon heavy cream
Method
- Cut a thin slice off the bottom part of each zucchini or squash so that they rest flat in a baking dish.
- Remove the top part of each zucchini and scoop out some of the pulp.
- Fill up each zucchini with the mixture of three cheeses.
- Mix the tomato sauce and cream in a bowl and add to the bottom of the baking dish. Add water if more sauce is needed.
- Place each zucchini in the dish. Add the zucchinis and bake for 20 minutes.
