Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup applesauce
  • 1/4 cup canola oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 cup raisins
  • 3/4 cup diced peeled apple
  • Topping ingredients
  • 2 tablespoons brown sugar
  • 2 teaspoons flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon butter

Method

  • Preheat oven to 375 degrees, spray 12 muffin cups with nonstick spray or use paper muffin cups.
  • In a large bowl, combine sugar, applesauce, oil, egg and vanilla until well mixed.
  • Combine flour, baking soda, baking powder and cinnamon; stir into bowl just until incorporated.
  • Stir in apples & raisins.
  • Pour into muffin cups, filling two-thirds full.
  • Topping: In a small bowl, combine sugar, flour, and cinnamon; cut in butter until crumbly.
  • Sprinkle evenly over muffins.
  • Bake for 20 minutes or until tops are firm to the touch.
