- 1 pkg (16 oz) penne
- 2 tbsp olive oil
- 1 None onion, sliced
- 2 cloves garlic, crushed
- 1 small red chili pepper, seeded and chopped
- 8 oz cherry tomatoes, halved
- 1/2 cup white wine
- 1/2 cup store-bought pesto
- 3/4 cup crumbled feta cheese
- None None Basil leaves, to serve
- None None Crusty bread, to serve
Method
- Cook pasta in boiling salted water according to package directions. Drain well and return to the pan
- Heat oil in a large skillet on high heat. Saute onion, garlic and chili pepper for 2-3 mins, until onion is tender. Reduce heat to medium. Stir in tomatoes and wine. Cook, stirring, for 2-3 mins, until tomatoes soften.
- Add tomato mixture and pesto to the pasta. Season to taste and toss to coat well. Serve topped with feta and basil leaves. Accompany with crusty bread.
