Ingredients

  • 1 pkg (16 oz) penne
  • 2 tbsp olive oil
  • 1 None onion, sliced
  • 2 cloves garlic, crushed
  • 1 small red chili pepper, seeded and chopped
  • 8 oz cherry tomatoes, halved
  • 1/2 cup white wine
  • 1/2 cup store-bought pesto
  • 3/4 cup crumbled feta cheese
  • None None Basil leaves, to serve
  • None None Crusty bread, to serve

Method

  • Cook pasta in boiling salted water according to package directions. Drain well and return to the pan
  • Heat oil in a large skillet on high heat. Saute onion, garlic and chili pepper for 2-3 mins, until onion is tender. Reduce heat to medium. Stir in tomatoes and wine. Cook, stirring, for 2-3 mins, until tomatoes soften.
  • Add tomato mixture and pesto to the pasta. Season to taste and toss to coat well. Serve topped with feta and basil leaves. Accompany with crusty bread.
