Ingredients
- 2 c. sugar
- 1/2 c. shortening
- 1 stick oleo
- 1 c. buttermilk
- 2 c. flour
- 1 c. pecans, chopped
- 1 tsp. vanilla
- 1 tsp. cream soda
- 1 tsp. salt
- 5 eggs, separated
- 2 c. coconut
Method
- Cream sugar, shortening and oleo.
- Add beaten yolks.
- Beat until fluffy.
- Add vanilla and buttermilk with dry ingredients. Fold in beaten egg whites.
- Add coconut and pecans.
- Use 3 (9-inch) pans.
- Bake at 325° for 30 to 35 minutes.
