Ingredients

  • Dressing
  • 1/2 teaspoon finely grated orange zest
  • 1/4 cup fresh squeezed orange juice
  • 1/2 cup vegetable oil
  • 2 tablespoons sugar
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh squeezed lemon juice
  • 1 green onion, thinly sliced
  • salt and pepper, to taste
  • Salad
  • 6 -8 cups mixed salad greens
  • 1 (8 ounce) can mandarin oranges, drained (or fresh!)
  • 1 cup sliced fresh strawberries
  • 1 medium firm ripe avocado, cut into cubes
  • 1/4 cup chopped pecans (optional)

Method

  • Combine dressing ingredients. Mix well and refrigerate.
  • Combine greens and fruits, toss with dressing and serve.
  • Top with chopped pecans, if desired.
