Ingredients

  • 2 c. sugar
  • 1 1/4 c. vegetable oil
  • 4 eggs
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. strawberries plus juice (this is one 16 oz. box frozen, sliced strawberries)
  • 1 1/4 c. chopped pecans

Method

  • Mix sugar and oil; add eggs, one at a time, and beat after each one.
  • Sift dry ingredients, then add to egg mixture.
  • Add strawberries; stir in pecans.
  • Grease and flour two 9 x 5-inch loaf pans.
  • Bake at 350° for 1 hour and 15 minutes.
  • Cool for 15 minutes before removing from pans.
