Ingredients
- 2 c. sugar
- 1 1/4 c. vegetable oil
- 4 eggs
- 3 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 2 c. strawberries plus juice (this is one 16 oz. box frozen, sliced strawberries)
- 1 1/4 c. chopped pecans
Method
- Mix sugar and oil; add eggs, one at a time, and beat after each one.
- Sift dry ingredients, then add to egg mixture.
- Add strawberries; stir in pecans.
- Grease and flour two 9 x 5-inch loaf pans.
- Bake at 350° for 1 hour and 15 minutes.
- Cool for 15 minutes before removing from pans.
