Ingredients

  • 4 ounces dried strawberries
  • 4 ounces dried peaches cut into quarters
  • 1/3 cup brandy
  • 2/3 pound brioche bread cut into chunks
  • 4 large eggs lightly beaten
  • 1/4 cup sugar
  • 2 cups low fat milk
  • 1 cup light cream
  • 1 vanilla bean split lengthwise, seeds scraped
  • powdered sugar for dusting

Method

  • Preheat oven to 375°F. Grease an 8-cup baking dish with butter. Soak dried fruit in brandy for 10 mins. Place half of brioche in base of prepared dish. Top with 2/3 of fruit. Top with remaining brioche and fruit.
  • Whisk together egg and sugar. Place milk and cream in a pan on low. Stir in vanilla. Heat until almost simmering. Whisk into egg mixture. Strain over brioche and let stand 10-15 mins. Place baking dish in a larger baking pan. Fill baking pan halfway with hot water and bake 45 mins, until a knife inserted comes out clean. Dust with powdered sugar to serve.
