Ingredients
- 1 c. cooked long grained rice
- 1/4 pound boned cooked pork, cut into strips or possibly cubes
- 1/2 c. each julienne-cut green bell pepper & red bell pepper (matchstick pcs)
- 1/4 c. each sliced scallions (green onions) & mushrooms
- 1 tbsp. each corn syrup, teriyaki sauce & rice vinegar
- 1 1/2 teaspoon each grated gingerroot & peanut or possibly vegetable oil
- 1/2 teaspoon Chinese sesame oil
- 1/4 teaspoon freshly grnd pepper
Method
- In medium mixing bowl combine rice, pork and vegetables; set aside.
- In blender container combine remaining ingredients and process till combined, scraping down sides of container as necessary.
- Pour dressing over salad and toss to combine.
- Serve immediately.
- Serves 2 (1 1/2 c. each).
