Ingredients

  • 1 1/2 lb. Chinese cabbage
  • 1 (12 oz.) can bamboo shoots
  • 1/2 lb. lean pork or boneless chicken breast
  • 2 Tbsp. dark soy sauce
  • 1/2 c. peanut, vegetable or corn oil
  • 1 tsp. sugar

Method

  • Separate leaves of cabbage and cut one leaf at a time into thirds.
  • Pile the thirds atop one another and slice lengthwise into fine shreds about 2 inches long.
  • Drain bamboo shoots; drop into boiling water and simmer 5 minutes to remove canned flavor. Drain, cool and slice into thin strips like the cabbage.
  • Thinly slice and shred the pork or chicken.
  • Place into bowl with soy sauce, stirring to coat.
