Ingredients

  • 6 None onions, peeled, 2 finely diced, 4 finely sliced
  • 4 None rib-eye steaks
  • 2 tbsp olive oil
  • 80 g butter
  • 1 tbsp plain flour
  • 300 ml beef broth
  • 2-3 tbsp whiskey

Method

  • Heat 1 tbsp oil in 2 separate frying pans. Sear steaks for 10 mins, until browned on both sides. Season then set aside. Meanwhile, heat 2 1/2 tbsp butter in a saucepan. Saute sliced onions then cover and cook for 10 mins, stirring occasionally. Season.
  • Add diced onions to a frying pan and dust with flour. Saute. Deglaze the other pan with stock and whiskey. Add sauteed diced onions and simmer for 5 mins. Add remaining butter. Season.
