Ingredients
- 1.2 kg potatoes
- 6 None onions, peeled and sliced
- 4 None beef steaks (about 250g each)
- 7 tbsp clarified butter
- 1/2 bunch parsley, chopped finely
- 1 pinch grated nutmeg
Method
- Cook the potatoes in of boiling water for 20 mins. Drain the potatoes, rinse in cold water and slide off the skin. Allow to cool, then slice.
- Preheat the oven to 300°F. Heat 2 tbsp of clarified butter in a large skillet. Fry the steaks for 5 mins, turning once. Season to taste. In a second pan heat 1 tbsp of clarified butter and fry the onions for 3 mins. Put the steaks and onions in an ovenproof dish and roast for 10 mins.
- Heat 4 tbsp of clarified butter in a large skillet and fry the potatoes for 10 mins until golden. Sprinkle with parsley and nutmeg. Serve the steak and onions with the potatoes.
