Ingredients

  • 3 lb. cooked potatoes, quartered (use "red" potatoes)
  • 1/2 c. Italian salad dressing (the bottled type)
  • 1/2 c. sliced green onions
  • 1/4 c. chopped parsley
  • 1 c. mayonnaise *
  • sliced hard-boiled eggs

Method

  • Leave skin on potatoes when boiling.
  • Put in large bowl when boiled and after drained.
  • Make the following to pour over while potatoes are still warm:
  • Italian salad dressing, sliced green onions and chopped parsley.
  • Pour over the warm bite-size potatoes and let set for about 1 hour to marinate.
  • Toss several times. Then add the mayonnaise.
  • Toss until completely covered.
  • Put in fridge for at least 2 hours.
  • Better to chill overnight so flavors have plenty of time to blend.
  • Just before serving, garnish with sliced hard-boiled eggs.
