Ingredients

  • 3 small onions
  • 1/2 tsp garlic salt
  • 50 ml extra virgin olive oil
  • 8 small potatoes
  • 1 (OPTIONAL) handful of parsley or coriander (depending on preference)
  • 4 garlic cloves

Method

  • Preheat oven to 200 Celsius.
  • Wash the potatoes well and peel the onions.
  • And place in an oven proof dish.
  • Sprinkle with the salt and place in the oven.
  • Bake for 30-35 minutes.
  • Peel and roughly squash the garlic.
  • When the potatoes are cooked, using the back of a tablespoon squash one by one.
  • In a small saucepan heat the olive oil with the garlic.
  • About 3-4 minutes.
  • When well heated, drizzle the oilve oil with the garlic over the potatoes.
  • Roughly chop the parsley or coriander and sprinkle over the potatoes.
