Ingredients
- 7 squash (medium size)
- 1 c. sugar
- 1 Tbsp. cinnamon
- 1 c. milk
- 2 tsp. cornstarch
- 3/4 c. sugar
- 3 eggs, whipped
- 1 Tbsp. cinnamon
- unbaked pie crust
Method
- Wash, slice and cap 7 medium squash (do not peel).
- Put in crock-pot and cover with 1 cup sugar and 1 tablespoon cinnamon. Cook until tender, 2 or 3 hours.
- Put in blender and puree.
- Mix next 5 ingredients with 1 cup of the squash.
- Put in unbaked pie shell.
- Sprinkle with nutmeg.
