Ingredients

  • 3 lb. small yellow squash
  • 1 small green pepper, minced
  • 1/4 c. onion, minced
  • 4 Tbsp. margarine
  • 2 tsp. sugar
  • 1 c. milk
  • 4 sliced dry toasted bread
  • 1 1/2 c. shredded sharp Cheddar, divided
  • 3 eggs, beaten
  • few drops hot pepper sauce

Method

  • Wash and slice squash, combine with green pepper and onion in boiling water.
  • Cook until tender and drain.
  • Add margarine and sugar and stir until melted.
  • Combine milk, crumbled toast, 1 cup cheese, eggs and pepper sauce.
  • Add to squash and mix well.
  • Put into 4 quart casserole dish.
  • Sprinkle with 1/2 cup cheese.
  • Cover and bake at 350° about 20 minutes.
  • Serves 10.
