Ingredients
- 3 lb. small yellow squash
- 1 small green pepper, minced
- 1/4 c. onion, minced
- 4 Tbsp. margarine
- 2 tsp. sugar
- 1 c. milk
- 4 sliced dry toasted bread
- 1 1/2 c. shredded sharp Cheddar, divided
- 3 eggs, beaten
- few drops hot pepper sauce
Method
- Wash and slice squash, combine with green pepper and onion in boiling water.
- Cook until tender and drain.
- Add margarine and sugar and stir until melted.
- Combine milk, crumbled toast, 1 cup cheese, eggs and pepper sauce.
- Add to squash and mix well.
- Put into 4 quart casserole dish.
- Sprinkle with 1/2 cup cheese.
- Cover and bake at 350° about 20 minutes.
- Serves 10.
