Ingredients

  • 10 oz. fresh spinach
  • 1 avocado
  • 2 Tbsp. lemon juice
  • 2 Tbsp. minced red onion
  • 8 strips bacon
  • 4 Tbsp. olive oil
  • 1 Tbsp. wine vinegar
  • 1/2 tsp. dry mustard
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. croutons

Method

  • Make dressing by combining olive oil; vinegar, mustard, salt and pepper.
  • Wash, drain and dry spinach.
  • Tear into bite size pieces and place in salad bowl.
  • Halve avocado, remove pit, skin and slice thin.
  • Place in small bowl and sprinkle with lemon juice to prevent discoloration.
  • Add minced onion and 2 teaspoons of dressing and toss lightly.
  • Pour dressing over spinach and toss lightly again.
  • Add avocado and toss.
  • Cook bacon in 1 teaspoon olive oil; when crisp and brown, pour over spinach mixture, fat and all.
  • Break up bacon pieces and add to mixture and toss.
  • Top with croutons and serve all at once.
